Easy Midweek Casserole

It’s Wednesday and I’m craving something quick, easy, delicious  and packed with nutrition! My Italian inspired casserole fits the bill!

Simply brown a 1lb 12oz package of lean ground turkey in a pan. Add a pinch of sea salt, ground pepper and minced onion. In a separate pan sauté chopped squash (2 summer squash and 2 zucchini squash) with a clove of chopped garlic. Once the squash is softened, add one chopped tomato. Add the ground turkey and mix in a handful of freshly chopped parsley, oregano and basil. Season to taste with additional sea salt and pepper. This delicious meal is packed with lean protein and lots of fiber and is gluten, dairy and soy free and is also paleo. Serves 4. If you’re not paleo and enjoy grains feel free to serve over brown rice or quinoa.
